Basil Lime Mushrooms (gluten free, vegan, AIP/paleo)



Here’s a delicious Autoimmune protocol (AIP) and vegan twist on one of my favorite dishes “spicy mushrooms”. However, most of the spices used in my original recipe contain nightshades, and they’re are off limits in the strict phase of AIP... so I had to get creative. 


In comes raw garlic. While raw garlic may leave your breath a bit pungent, it’s an excellent replacement for pepper, as raw garlic has a pretty spicy taste to it! While this dish definitely isn’t as spicy as the original, it holds its own as an even more flavor packed, nutritionally dense dish! 


Pair these mushrooms with my Quick-N-Easy Spaghetti Squash and some of my Egg Free Garlic Aioli for a full and delicious meal! 


This recipe is nutrient dense, Autoimmune Protocol (AIP) friendly, paleo, primal, Whole30 compliant, keto friendly, lower carb, gluten free, grain free, dairy free, nut free, nightshade free, vegetarian, & vegan!

  • You are what you eat and what for food eats. Using organic, GMO free, free/pasture raised, wild caught, minimally processed ingredients lead to an overall higher vibrational frequency. Basically, eating organic provides us extra energy currency!

  • Contains mushrooms, which are grounding and support the root chakra.

  • Contains green colored foods, which support and balance the heart chakra.

  • Contains zinc, which is needed for thousands of chemical reactions in your body involving protein, so it is also supportive to the root chakra.


Equipment Needed to Create this Recipe:

  • large skillet

  • wooden spoon

  • a good knife

  • cutting board

  • measuring cups/spoons

 

Basil Lime Mushrooms

(gluten free, vegan & AIP/paleo)

Prep time: 5 minutes Cook time: 15 minutes Yield: 4

Ingredients:

  • 24 oz. organic sliced mushrooms 

  • 6 oz. of fresh basil, sliced thin. 

  • 4-6 garlic cloves, minced

  • 4-6 tbsp. avocado oil 

  • The juice of 2 small limes, or 1 large lime

  • 1 tsp. garlic granules 

  • ½ -1 tsp. pink Himalayan sea salt 


How to Create this Dish:

  1. Heat up a large skillet over medium-high heat, adding the avocado oil. Once the oil has warmed, add all the mushrooms to the skillet. 

  2. Cook the mushrooms down for about 10 minutes, stirring occasionally to make sure the mushrooms don’t stick to the pan. Feel free to add a bit more avocado oil if needed and continued cooking until they start to brown a bit. Then, add the garlic granules. 

  3. While the mushrooms are cooking, prepare your basil and garlic. When the mushrooms have begun to brown, add the basil, lime and garlic to the skillet, cooking for just a minute or two, until the basil has wilted. 

  4. Finish with sea salt and enjoy!!
