When you’re on the Autoimmune Protocol (AIP), one of the things that’s on the “No-No” list, is coffee. (for more information on the do's and dont's of the protocol click HERE).
See coffee and I go wayyyyy back, an old friend of mine... and if you’re anything like me, you’ll understand my panic at the thought of having to break off this long term relationship! I wasn’t sure I could survive without it to be honest haha. This restriction, seemed unbearable and impossible.
Day one of no coffee and surprisingly, I found that it wasn’t going to be all too hard! That it wasn’t actually the coffee that I really needed in the morning but something warm and frothy to get my day started!
In comes my “Bullet Proof” Matcha Latte.
The idea came from my “Butta’ Cup-O-Joe” (aka butter coffee recipe found HERE) with just a few swaps for the butter and coffee! This is a super quick way to make matcha. It’s creamy, frothy, and totally satisfies your morning drink needs!
This recipe is nutrient dense, Autoimmune Protocol (AIP) friendly, dairy free, nut free, nightshade free, paleo, primal, Keto Friendly, lower carb & Whole30 compliant!
$ What Makes this High-Vibing Food?
First and foremost, putting your own love, gratitude, time and energy into making foods at home will automatically raise the vibration of the foods/meal. This will also help to balance your sacral and heart chakras. Putting your love into the food you prepare will literally raise the vibrational frequency as love is the highest vibration out there!
You are what you eat and what your food eats. Using organic, GMO free, free/pasture raised, wild caught, minimally processed ingredients lead to an overall higher vibrational frequency. Basically, eating organic provides us extra energy currency!

Be sure your coconut milk is full fat and unsweetened. For the strict phase of the AIP, be sure there are no added gums (the only ingredients should be coconut/coconut meat and water).
$ Equipment Needed to Create this Recipe:
small sauce pan
“Bullet Proof” Matcha Latte
(gluten free, dairy free, AIP/paleo friendly & pregnancy/nursing safe)
Prep time: 5 minutes Cook time: 5 minutes Yield: 1
12 oz. filtered water
¼ - ½ cup full fat, unsweetened coconut milk
½ - 1 scoop of Primal Kitchen Foods collagen peptides
1 tbsp. organic, cold pressed, unrefined coconut oil
½ - 1 tbsp. organic coconut mana
1-2 tsp. organic, ceremonial matcha powder (depending on the caffeine content you want)
1-2 tsp. raw, organic, wild honey
½ tsp. cinnamon powder
How to Create this Recipe:
Place the first two ingredients into a small sauce pan and heat over medium heat. Bring to a boil.
Meanwhile, place all remaining ingredients into a high-powered blender (I use my Vitamix).
Once your mixture is boiling, pour it into the blender. Cover the blender and blend on high until fully incorporated, frothy, and delicious!
