Dehydrated Pizza Crisps (gluten free, primal)



While I can't quite call these beauties, "chips" (as they're not totally crunchy), they sure do satisfy a chip craving! The flavor combination on these crisps is very reminiscent of pizza. Who doesn't love pizza and a good chip?!


Dehydrating these crisps allows you to retain more of the original nutritional content. So you get way more bang for your buck then frying in oil like you would a traditional chip!!

Equipment Needed to Create this Recipe:

  • dehydrator (optional- you can use oven instead)

  • sheet pan (if you're using the oven)

  • mixing bowl

  • parchment paper (if you're using the oven)

  • a good knife

  • measuring cups/spoons

 


Dehydrated Pizza Crisps

(gluten free & primal)

Prep time: 10-15 minutes Cook time: 12-24 hours Yield: 2

Ingredients:

  • 10 organic Roma tomatoes

  • ¼ cup fresh parsley, finely chopped

  • 3-4 tbsp. cojita cheese, grated

  • ½ - 1 tbsp. avocado oil

  • 1-2 tsp. garlic granules

  • Fresh cracked black pepper, to taste

  • Pink Himalayan sea salt, to taste


How to Create this Recipe:

  1. Slice the tomatoes into thick rounds.

  2. Place the tomato slices into a big bowl and very gently toss with the avocado oil. Use just enough oil to lightly coat the tomatoes. Depending on how much you like garlic, sprinkle your desired amount onto the tomato slices. I LOVE garlic so I add a very generous amount. Plus, I think it makes for a more flavorful "chip". Sprinkle fresh ground black pepper on and lightly toss the tomatoes. 

  3. Lay the tomato slices onto the dehydrator racks so that they're not over lapping (or onto your sheet pan in the same manner). Then, sprinkle each tomato slice with parsley and the grated cojita cheese. Dehydrate at 158 degrees ° F for 12-24 hours, depending on the crunch factor you'd like to achieve. Once you've achieved the right crunch, sprinkle with some pink Himalayan sea salt. Alternatively, you can cook these in the oven at 200 ° F for 5-6 hours, or until the edges begin to curl up and crisp.

* NOTES:

  • The thinner you slice the tomatoes the less they will hold up as a "chip", so I cut these with a serrated knife instead of using a mandolin.

  • The longer you dehydrate, the crispier they'll be. The chips will shrink significantly.
