Homemade coconut milk!
It's as simple as CRACK, SCOOP, & BLEND!
But first, let's talk about some of the nutritional benefits of coconut milk for a moment...
Coconut milk contains:
The medium chain fatty acid, lauric acid, known for being antiviral/bacterial and can even treat/prevent digestive disorders/chronic illnesses.
Manganese, copper, phosphorus, magnesium, iron, & potassium; micronutrients which contribute to combating stress, hypertension, & cardiovascular disease.
MCTs (medium chain triglycerides) are known for their ability to enhance physical performance & increase energy expenditure. This also leads to satiation, which helps prevent overeating. These fats are the preferred fuel for your body, as they are a cleaner, more efficient fuel. MCTs are also anti-inflammatory, which is important in the treatment/prevention of autoimmune conditions, chronic health conditions, & overall wellness.
The quality of your coconuts matters immensely! I highly suggest using organic coconuts.

Ingredients:
2 organic young coconuts
32 oz. filtered water
How to Create this Recipe:
Remove the top flesh of the coconut until you see/hit the hard shell underneath. Then, with the butt of a big kitchen knife, wack the top of the coconut (in the sam spot/area) a few times until a small crack/opening forms. This doesn't take long with the young coconuts.
Once you have a small opening, use the top of your knife or a butter knife to pry open the top. Do this carefully so you don't lose all the wonderful coconut water inside!
Next, after you have it open, drink up the coconut water!! It'll seriously be the best you've ever had!
Once all coconut water is removed, take a strong spoon & scoop out all the soft white flesh & place it into a blender (I use my Vitamix).
Then, add 32oz. of water. Blend on high for a few minutes. Ta dah!! That's it!

* NOTES:
The pulp will settle a bit over time, but just give it a shake & it'll incorporate again.
Keep refrigerated for up to a week or freeze it in smaller batches for later.
