Homemade, Fresh Coconut Milk (gluten/dairy free, AIP/paleo)

Homemade coconut milk!

It's as simple as CRACK, SCOOP, & BLEND!

But first, let's talk about some of the nutritional benefits of coconut milk for a moment...

Coconut milk contains

  • The medium chain fatty acid, lauric acid, known for being antiviral/bacterial and can even treat/prevent digestive disorders/chronic illnesses.

  • Manganese, copper, phosphorus, magnesium, iron, & potassium; micronutrients which contribute to combating stress, hypertension, & cardiovascular disease.

  • MCTs (medium chain triglycerides) are known for their ability to enhance physical performance & increase energy expenditure. This also leads to satiation, which helps prevent overeating. These fats are the preferred fuel for your body, as they are a cleaner, more efficient fuel. MCTs are also anti-inflammatory, which is important in the treatment/prevention of autoimmune conditions, chronic health conditions, & overall wellness.

The quality of your coconuts matters immensely! I highly suggest using organic coconuts.

This recipe is nutrient dense, Autoimmune Protocol (AIP) friendly, lower carb, grain free, gluten free, dairy free, egg free, nut free, paleo, primal, Whole30 compliant, & keto friendly!

What Makes this High-Vibing Food?

  • First and foremost, putting your own love, gratitude, time and energy into making foods at home will automatically raise the vibration of the foods/meal. This will also help to balance your sacral and heart chakras. Putting your love into the food you prepare will literally raise the vibrational frequency as love is the highest vibration out there!

  • You are what you eat and what your food eats. Using organic, GMO free, free/pasture raised, wild caught, minimally processed ingredients lead to an overall higher vibrational frequency. Basically, eating organic provides us extra energy currency!

  • This recipe is heavy in water, which supports the sacral chakra.

  • This recipe is full of healthy fats and oils which supports the sacral chakra.

  • Contains iron, which is supportive for your root chakra.

  • This recipe is high in fiber, which supports all three of the lower chakras as it aides in the movement and flow of bulk during the digestive processes.

Equipment Needed to Create this Recipe:

  • high-powered blender

Homemade, Fresh Coconut Milk

(gluten free, dairy free & AIP friendly)

Prep time: 5-10 minutes Cook time: none Yield: varies

  • 2 organic young coconuts

  • 32 oz. filtered water

How to Create this Recipe:

  1. Remove the top flesh of the coconut until you see/hit the hard shell underneath. Then, with the butt of a big kitchen knife, wack the top of the coconut (in the sam spot/area) a few times until a small crack/opening forms. This doesn't take long with the young coconuts.

  2. Once you have a small opening, use the top of your knife or a butter knife to pry open the top. Do this carefully so you don't lose all the wonderful coconut water inside!

  3. Next, after you have it open, drink up the coconut water!! It'll seriously be the best you've ever had!

  4. Once all coconut water is removed, take a strong spoon & scoop out all the soft white flesh & place it into a blender (I use my Vitamix).

  5. Then, add 32oz. of water. Blend on high for a few minutes. Ta dah!! That's it!

  6. Enjoy!!

  • The pulp will settle a bit over time, but just give it a shake & it'll incorporate again.

  • Keep refrigerated for up to a week or freeze it in smaller batches for later.
