I love chicken salads because they’re so darn quick and easy! Try my Mexican inspired spin on a classic dish.
This recipe is nutrient dense, Autoimmune Protocol (AIP) friendly, lower carb, grain free, gluten free, dairy free, nut free, egg free, nightshade free, paleo, primal, Whole30 compliant, & keto friendly!
What Makes this High-Vibing Food?
First and foremost, putting your own love, gratitude, time and energy into making foods at home will automatically raise the vibration of the foods/meal. You can also replace my Egg-Free Garlic Aioli with Primal Kitchen’s avocado oil based Mayo + garlic granules for a clean, healthy option (this will no longer be egg free and will NOT be AIP and does contain nightshades and eggs).

Mexican Chicken Salad

1 rotisserie chicken, meat removed and shredded
1 cup diced mango
1 can of black olives, halved (6 oz.)
2 avocados, diced
3 large celery ribs, chopped
1 large garlic cloves, minced
6 tbsp. red onion, chopped
4 tbsp. fresh cilantro, minced
1 cup of my Egg-Free Garlic Aioli (or Primal Kitchen Mayo + 1 tsp. garlic granules)
6 tsp. apple cider vinegar
2 tsp. garlic flakes
1 tsp. dried oregano
1 tsp. dried cilantro
How to Create this Recipe:
Prep all your ingredients and add to a big bowl.
In a small-medium bowl, make your dressing by adding all the ingredients and mixing well.
Pour the dressing over the salad ingredients and mix well.
Serve with plantain chips and over a bed of greens!.
