Pumpkin Spice “Latte” (dairy/coffee free,AIP/paleo, pregnancy/nursing safe)



So I’m a sucker for pumpkin spice stuff, especially this time of year! But since I cannot have coffee, nor most of the questionable ingredients found in a typical pumpkin spice latte, I had to figure something else out! 


How to make a pumpkin spice latte that tastes like the real thing?! Chicory root that’s how! 


Chicory root is a plant in the dandelion family. It has a smell and taste similar to coffee. It’s also full of nutritional benefits like a high fiber content and plenty of inulin (a prebiotic)! 


Use this recipe to feel all the feels of fall without compromising nutrition or exposing your body to all the nasty ingredients you’ll find in the store bought or (most) coffee shop versions.

This recipe is nutrient dense, Autoimmune Protocol (AIP) friendly, grain free, gluten free, dairy free, nut free, egg free, nightshade free, paleo, primal & pregnancy/nursing safe!

What Makes this High-Vibing Food?

  • First and foremost, putting your own love, gratitude, time and energy into making foods at home will automatically raise the vibration of the foods/meal. This will also help to balance your sacral and heart chakras. Putting your love into the food you prepare will literally raise the vibrational frequency as love is the highest vibration out there!

  • You are what you eat and what your food eats. Using organic, GMO free, free/pasture raised, wild caught, minimally processed ingredients lead to an overall higher vibrational frequency. Basically, eating organic provides us extra energy currency!

  • This dish is rich in collagen, which is grounding and protective. It also supports the root chakra.

  • This recipe is heavy in water, which supports the sacral chakra.

  • This recipe is full of healthy fats and/or oils, which supports the sacral chakra.

  • Contains orange colored foods. Orange vibrates at about the same frequency as the sacral chakra. So, eating orange foods helps to maintain the proper root chakra frequency.

  • This recipe is higher in carbohydrates, providing the solar plexus chakra with both long-lasting sugar sources (like fiber) and quick acting sugars like glucose.

  • Contains yellow/tan/golden colored foods, which help raise the body’s frequency to that of the solar plexus, helping to balance it.

*While I cannot guarantee that using these swaps will yield the same flavors I have create in this recipe, these swaps should generally work well!*

  • Use the roasted chicory root listed below if you're a mama-to-be or anyone else avoiding coffee or in the strict phase of the AIP. You CAN also use a clean, organic coffee instead if you're not sensitive to it or in the strict phase of the AIP.

Equipment Needed to Create this Recipe:

  • small sauce pan or tea kettle

  • high-powered blender (I use my Vitamix)

  • tea diffuser

  • a big mug

  • measuring cups/spoons

 

Pumpkin Spice “Latte”

(gluten free, dairy free, coffee free, AIP friendly & pregnancy/nursing safe)

Prep time: 5 minutes Cook time: 10 minutes Yield: 1

Ingredients:

  • ~ 1 tbsp. roasted chicory root

  • 16-18 oz. hot water

  • 1 scoop of Primal Kitchen collagen peptides

  • 1-1 ½ tbsp. coconut oil

  • 1 ½-2 tbsp. organic pumpkin purée

  • 1-2 tbsp. maple syrup

  • ⅛-¼ tsp. pure vanilla bean powder

  • A few good sprinkles of cinnamon

  • A pinch of cloves  


How to Create this Recipe:

  1. First, boil your water. While the water is boiling, take ~ 1 tbsp. of roasted chicory root and add it to a tea defuser.

  2. Then, add all the remaining ingredients (from collagen peptides down) to a high-powered blender. Set aside.

  3. Once the water has boiled, pour it into a big mug (about 16-18 oz.) and then add the tea defuser to the mug. Allow it to steep for at least 5 minutes. After it has steeped, you can reheat it so it’s piping hot, or pour it straight into the blender. Make sure to remove the tea defuser BEFORE microwaving or blending.

  4. Blend for a minute or two until creamy and frothy.

  5. Enjoy!!
