Sausage, Hidden Offal, & Kale Soup (gluten free, AIP/paleo)



Here's another tasty way to get in that organ meat! Try my warm and wonderful Sausage, Hidden Offal, & Kale Soup! This will be a hit even if it's your first time trying offal in your cooking!

This recipe is nutrient dense, Autoimmune Protocol (AIP) friendly, lower carb, grain free, gluten free, dairy free, nut free, egg free, nightshade free, paleo, primal, Whole30 compliant, & keto friendly!

What Makes this High-Vibing Food?

  • First and foremost, putting your own love, gratitude, time and energy into making foods at home will automatically raise the vibration of the foods/meal. This will also help to balance your sacral and heart chakras. Putting your love into the food you prepare will literally raise the vibrational frequency as love is the highest vibration out there!

A Short Note on Swaps or Ingredients:

*While I cannot guarantee that using these swaps will yield the same flavors I have create in this recipe, these swaps should generally work well! *

  • Use the Breakfast Sausage Spice if you're sensitive to nightshades or in the strict phase of the AIP. You can use it even if you're not sensitive to nightshades, but you can also use a premade organic breakfast sausage seasoning if you'd like!

  • Chicken livers are extremely nutrient dense and full of vitamins and minerals. I encourage you to give this super food a chance in the recipe before deciding you don't like it :o)

  • high-powered blender or food processor

  • heavy bottomed pot

  • a good knife

  • measuring cups/spoons

 

Sausage, Hidden Offal, & Kale Soup

(gluten free & AIP/paleo)

Prep time: 5 minutes Cook time: 25-35 minutes Yield: 4

Ingredients: 

  • 1.5 lbs. ground pork

  • ½ lb. organic chicken livers, pureed

  • 2 tbsp. breakfast sausage spice (see recipe HERE)

  • 1 tbsp. bacon fat or avocado oil

  • 2 garlic cloves, minced

  • 12 oz. or one big bunch of curly kale, stems removed, chopped/torn

  • 8-10 cups EPIC bone broth

  • ½ cup of freshly squeezed lemon juice

  • Sea salt, to taste


How to Create this Recipe:

  1. First you will need to make the breakfast sausage and offal mixture. To do this, first puree the chicken livers. 

  2. Next, add the fat of your choice to a large heavy bottomed soup pot over medium-high heat. Once melted, add the ground pork and pureed chicken livers, followed by the breakfast sausage spice. Cook until the meats have cooked through, no pink remains and the sausage has browned a bit. 

  3. Then add the garlic and cook for 1 additional minute. Remove from heat. 

  4. To the same pot, add the kale and bone broth. Bring the pot back to a gentle simmer until soup the kale has wilted a bit. 

  5. Finally add the salt and lemon juice. Stir to combine. Taste and add more salt if needed. 

  6. Portion into 4 servings.
