Here’s a refreshing and delicious twist on traditional basil based pesto! But don’t be fooled by the unique and different ingredients, this is still a very true, garlicky and cheesy tasting pesto.
Enjoy over an AIP friendly noodle, like sweet potato noodles, spiralized veggies, or spaghetti squash, use over proteins like chicken, steak, salmon, or shrimp, or even use it as a dip!

Tigernut flour is a nut free flour alternative and is safe for those with nut allergies or those in the strict phase of the AIP. Feel free to use another nut flour, like almond flour, in its place if you’re not sensitive.
Nutritional yeast are flakes of yeast that have a very cheesy like taste and is full of B vitamins. It is a great non dairy alternative to add a cherry taste to any dish!
$ Equipment Needed to Create this Recipe:
high-powered, professional grade blender
tamper or silicon spatula
Spinach & Tigernut Pesto
(dairy free & AIP/paleo)
Prep time: 5 minutes Cook time: none Yield: 1.5-2 cups
1 gigantic handful of organic spinach
¼ cup + 2 tbsp. tigernut flour
4 big garlic cloves
Juice of ½ a lemon
1-1.5 tsp. pink Himalayan sea salt
¼ -½ cup extra virgin olive oil or avocado oil (use enough to get your desired consistency of pesto)
2 tbsp. nutritional yeast (optional, but highly recommended for a cheesy flavor)
How to Create this Recipe:
Put all of the ingredients into your high-powered blender (I use my Vitamix) and blend on the medium-low setting, using the tamper to make sure all the ingredients get incorporated.
Then, blend on medium-high until its blended thoroughly! It should be smooth and creamy in texture.
Scrap all of the contents into a glass jar or container, storing in your fridge for up to 2 weeks.
