Barbecue Beef Bowls (gluten/nightshade free, AIP/paleo)



Continuing on with my week of quick and easy meals, is my BBQ Beef Bowls.

This can be quickly thrown together if you've got the meat ready! But if you're making the meat as well, you can speed up the process by using an instant pot. Or let it slow cook in the crockpot while at work.


You can customize this bowl by subbing pork for the beef, using any greens your heart desires, swapping the avocado for olives or another healthy fat like organic, grass-fed cheese (if you can handle dairy) and swap the plantain chips for a different chip like cassava flour chips, cassava chips, almond flour crackers, or a potato chip fried is avocado or coconut oil. 


I encourage you to make it your own and have fun in the kitchen doing so! 


This recipe is nutrient dense, Autoimmune Protocol (AIP) friendly, lower carb, grain free, gluten free, dairy free, nut free, egg free, nightshade free, paleo, & primal!

Barbecue Beef Bowls

(gluten free, nightshade free, & AIP/paleo)

Prep time: 5 minutes Cook time: none Yield: 4 servings

Ingredients: 

  • 3-4 cups BBQ Shredded Beef (see separate recipe HERE)

  • 4 cups greens of choice

  • 2 cups plantain chips

  • 1- 2 avocados, cubed


Directions:

  1. Add all ingredients to a bowl and serve! Each bowl should contain the following:

  • ¾-1 cup BBQ Shredded Beef (see separate recipe HERE

  • 1 cup greens of choice

  • ½ cup plantain chips

  • ¼-½ cubed avocado
