Date Night Gluten Free Pizza (part 2, the Breakfast Cauli-Rice Crust Pizza)

the Breakfast Cauli-Rice Crust Pizza


I've created a mini Date Night series of pizza recipes and this is the first in the series. These Pizzas may take a bit of extra work BUT they are SOOOO worth it! I've made this one of my "date-night" recipes, since it is more time consuming and involved. This is perfect for date nights, or girls/boys nights in too! 


I highly encourage you to get adventurous and use whatever healthy toppings your hearts desire! The options for crust seasonings, sauces, and toppings are endless. So make a night (or day) of it and get to cookin'!!


I've developed three pre-created options, just in case you're not sure where to start. The first pizza is a BBQ Pork Cauli-Rice Crust Pizza (part 1). The second, a Breakfast Cauli-Rice Crust Pizza (part 2). And finally, a Veggie Broccoli-Rice Crust Pizza (part 3).

This recipe is nutrient dense gluten free, grain free, keto friendly, lower carb & primal.

What Makes this High-Vibing Food?

  • First and foremost, putting your own love, gratitude, time and energy into making foods at home will automatically raise the vibration of the foods/meal. Equipment Needed to Create this Recipe:

  • cheese cloth

  • parchment paper

  • pizza pan or sheet pan

  • medium skillet

  • small sauce pan

  • mixing bowls

  • measuring cups/spoons

 


Breakfast Cauli-Rice Pizza

(gluten free & primal)

Yield: 1 medium pizza or 6 slices

Ingredients:

Crust

  • 1, 12 oz. bag fresh or frozen cauli-rice (or 1 medium head of cauliflower, riced)

  • 1 egg

  • ¼ cup parmesan cheese, grated

  • ¼ cup low moisture mozzarella, shredded

  • ½ tbsp. fresh parsley, chopped

  • ½ tsp. roasted garlic, minced/chopped

  • ½ tsp. breakfast sausage spice (no salt), or use my recipe to make your own breakfast sausage spice mix

  • ½ tsp. garlic granules

Toppings

  • 2 over-medium eggs or 2 scrambled eggs - if that’s more your style! (cooked ahead of time)

  • 1/2 cup uncured bacon, cooked and sliced into medium-small pieces

  • 1/2 cup of cheddar cheese, shredded

  • 1 handful of fresh spinach

  • 2 tbsp. gluten free gravy (optional, but highly suggested. Recipe found here)


How to Create this Recipe:

  1. Pre heat your oven to 500 ° F.

  2. For the bacon pieces, I used about half a package of uncured, nitrate/nitrite/sugar free bacon. I cut the bacon into about 1 inch pieces. This is easiest if you get the bacon very cold (by putting it in the freezer for about 30 minutes) and then using kitchen sheers to cut the bacon into bits. You'll then cook them up in a skillet to your desired crispy doneness. Remove the bacon from the pan and allow to drain on a paper towel while you complete the rest of the recipe.

  3. For the crust: Now that you have everything prepped and chopped, it’s time to make the crust! Be sure your oven has preheated to 500 ° F. Then, empty the cauli rice into a big microwave safe bowl. Place it in the microwave, uncovered (with no additional water) for 5 minutes. Allow the cauli rice to cool quite a bit before proceeding. After it has cooled, place all the “rice” into the cheese cloth, squeezing the “rice” into a ball within the cheesecloth to get out all of the liquid. You want to remove ALL the excess liquid you can possibly get out. Once you've gotten all the moisture out that you can, place the ball of “rice” back into the big bowl and add all the remaining crust ingredients. Mix all of this until it becomes dough like and forms into a ball with your hands. Next, you’ll want to spread the curst mixture out onto a piece of parchment paper and form it into a round pizza crust shape. Doing this with your hands is best! Try wetting your hands a bit before spreading it out. Once you have the crust formed and thinned out to about 1/4 inch thickness, you're ready to bake it! Place the crust, along with the parchment paper its on, onto a pizza pan. With a knife or fork, poke a few holes around the crust. This will let any trapped air/steam vent through the crust so bubbles do not form. Then, bake the crust for 15-18 minutes or until it's a golden color and has become crispy. ​

  4. For the eggs: While the crust cooks, fry up or scramble your eggs.

  5. For topping the pizza: Next, remove the crust from the oven and ​​begin adorning the toppings! Start with the gravy, then the cheese and spinach, followed by the bacon and cooked eggs. After you have topped the pizza with all of its individual toppings, pop it back into the oven on broil for about 3-4 minutes, just until the cheese is melted and spinach is a bit wilted. Keep a closer eye on your pizza while under the broiler, as it can easily burn!​ Then Enjoy your pizza!

* NOTES:

  • Any additional bacon fat you have, can be stored in a container for future use.

  • Do not rush the removing liquid step! Removing all of the water is key to getting a crispier crust!
