Radish Top & Almond Pesto (gluten free & paleo)



Do you ever buy bunches of veggies, like radishes, carrots, or beets that still have the greens attached to them? Do you throw out the greens because you're unsure if they're edible or what you can do with them? Well, if you do,  STOP!!! These greens are chock-full of micronutrients and make great additions to smoothies, salads, and soups... BUT my favorite was to use them is making them into pesto!! 


The pesto recipe I am sharing with you today is made from radish greens...


Radish Greens:

  • Contain almost 6 times the amount of vitamin C than the root of the radish (the part you're used to eating).

  • Full of magnesium, calcium, iron, phosphorus, vitamin B6 & A, folic acid, potassium, fiber and antioxidants. These nutrients help aid in digestions, detoxification pathways, improve skin health, support cardiovascular health, boost your immune system and aide in normalizing blood glucose levels. That sure is a lot of bang for your buck!

This recipe is nutrient dense, lower carb, grain free, gluten free, paleo, primal, Whole30 compliant, & keto friendly!

What Makes this High-Vibing Food?

  • First and foremost, putting your own love, gratitude, time and energy into making foods at home will automatically raise the vibration of the foods/meal. This will also help to balance your sacral and heart chakras. Putting your love into the food you prepare will literally raise the vibrational frequency as love is the highest vibration out there!

  • You are what you eat and what your food eats. Using organic, GMO free, free/pasture raised, wild caught, minimally processed ingredients lead to an overall higher vibrational frequency. Basically, eating organic provides us extra energy currency!

Equipment Needed to Create this Recipe:

  • food processor or high-powered blender (see note at end of recipe)

  • measuring cups/spoons

 


Radish Top & Almond Pesto

(gluten free & paleo)

Prep time: 5 minutes Cook time: none Yield: about 1 cup

Ingredients:

  • 1 bunch of radish greens

  • ½- 1 cup Primal Kitchen extra virgin avocado oil (EVAO)

  • ¼ heaping cup raw, unsalted almonds

  • ¼ heaping cup raw, organic parmesan cheese, cubed

  • 2 tbsp. shredded raw, organic parmesan cheese

  • 3 heaping tsp. garlic, chopped/minced

  • ½-¼ tsp. fresh ground black pepper

  • ¼ tsp. pink Himalayan sea salt


How to Create this Recipe:

  1. Place all the ingredients, except the oil, into a food process or high powered blender. Blend on high for 1 minute.

  2. Then, you will slowly add in the EVAO, starting with ½ a cup and working up to 1 cup. The amount you will need, will depend on the thickness of pesto you like. I like mine to be a bit more on the creamy/liquid-y side so I used 1 full cup of oil.

  3. Continue to blend until you get a smooth, incorporated pesto! Store in a glass jar in the fridge to top all kinds of healthy gluten free dishes!


* NOTES:

  • Truth be told, I first tried this in my KitchenAide food processor (as you can see in the photos), BUTTTT, it wasn't blending the pesto very well. So I switched over to my Vitamix blender. There's really not much this blender can't do! So I would suggest starting with a high powered blender if you have one.
