Quick-N-Easy Empty the Fridge Fried “Rice”
(gluten free & AIP friendly)
Prep time: 5 minutes Cook time: ~20 minutes Yield: 6
1 package Pederson Farms sugar free, uncurred bacon (chopped into cracklings- aka little bits) + the ½ the fat from the bacon
4 slices of Plainville Farms honey maple ham, diced
2, 16 oz. bags of organic frozen cauliflower rice
1 can of organic bamboo shoots, drained & rinsed
4 green onions, chopped
1-2 cups of any additional veggie you’ve got in the fridge!
4 tbsp. coconut aminos
1 tbsp. coconut vinegar
2 large garlic cloves, minced
1 tbsp. sweet basil
½ tbsp. ginger powder
3 tsp. garlic granules
2 tsp. onion granules
2 tsp. dried, minced onions
1 tsp. gluten free fish sauce
1 tsp. pink Himalayan sea salt
1 tsp. kelp granules
How to Create this Recipe:
First cook up your bacon until nice and crispy brown. Drain the bacon cracklings on a paper towel.
Next, using half the bacon fat from cooking the bacon, cook the cauliflower rice for about 8 minutes, over medium high heat, stirring occasionally to prevent burning.
Once the “rice” has cooked, turn the heat up a bit and then add in the remaining ingredients and cook for another 5-10 minutes until all veggies are cooked and spices incorporated.
Finally, add the bacon cracklings and diced ham back to the pan and stir them in. That’s all!
