Quick-N-Easy Empty the Fridge Fried “Rice” (gluten free & AIP friendly)



This meal came together tonight based off what I had on hand! Get creative and use whatever nutritious veggies you have on hand that inspires you tonight! .

This recipe is nutrient dense, Autoimmune Protocol (AIP) friendly, lower carb, grain free, gluten free, dairy free, nut free, egg free, nightshade free, paleo, primal, Whole30 compliant, & keto friendly!



 

Quick-N-Easy Empty the Fridge Fried “Rice”

(gluten free & AIP friendly)

Prep time: 5 minutes Cook time: ~20 minutes Yield: 6

Ingredients:

  • 1 package Pederson Farms sugar free, uncurred bacon (chopped into cracklings- aka little bits) + the ½ the fat from the bacon

  • 4 slices of Plainville Farms honey maple ham, diced

  • 2, 16 oz. bags of organic frozen cauliflower rice

  • 1 can of organic bamboo shoots, drained & rinsed

  • 4 green onions, chopped

  • 1-2 cups of any additional veggie you’ve got in the fridge!

  • 4 tbsp. coconut aminos

  • 1 tbsp. coconut vinegar

  • 2 large garlic cloves, minced

  • 1 tbsp. sweet basil

  • ½ tbsp. ginger powder

  • 3 tsp. garlic granules

  • 2 tsp. onion granules

  • 2 tsp. dried, minced onions

  • 1 tsp. gluten free fish sauce

  • 1 tsp. pink Himalayan sea salt

  • 1 tsp. kelp granules


How to Create this Recipe:

  1. First cook up your bacon until nice and crispy brown. Drain the bacon cracklings on a paper towel.

  2. Next, using half the bacon fat from cooking the bacon, cook the cauliflower rice for about 8 minutes, over medium high heat, stirring occasionally to prevent burning.

  3. Once the “rice” has cooked, turn the heat up a bit and then add in the remaining ingredients and cook for another 5-10 minutes until all veggies are cooked and spices incorporated.

  4. Finally, add the bacon cracklings and diced ham back to the pan and stir them in. That’s all!

  5. Enjoy!
